Banana Cake
1/2 cup butter, softened
1 cup sugar
2 eggs
4 to 6 bananas, mashed
1 teaspoon baking soda
2 cups flour
Pinch of salt
1 teaspoon vanilla extract
1/2 cup raisins, optional
1/2 cup walnuts, optional
Mix everything in the order given one at the time. Generously grease and light flour two
round cake pans. Pour mixture into pans and bake at 350 °F. for 30 to 35 minutes.
Move pans to the highest part of the oven for 5 more minutes.
Yield: 2 cakes
